Brown Butter Apple Cookies

The secret to these oatmeal cookies isn't the apple or the spices — though both are essential. It's the butter. Specifically, browned butter. By cooking the butter slowly until the milk solids toast and turn golden, you unlock a nutty, toffee-like flavor that no amount of vanilla or sugar can replicate. It's a ten-minute step that pays dividends in every single bite. Combined with old-fashioned oats, a trifecta of warming spices, and a generous cup of chopped apple, the result is a cookie that's chewy, fragrant, and deeply layered

Brown butter adds a nutty richness that beautifully balances the caramel notes from the brown sugar and enhances the natural sweetness of the apples.

Preparation Time: 15 Minutes

Cooking Time: 10 - 15 Minutes

Serves: 15

Ingredients

1 cup all-purpose flour

1 cup old fashioned rolled oats

¾ cup brown sugar

1 tsp cinnamon

¼ tsp nutmeg

⅛ tsp allspice

½ tsp baking soda

¼ tsp salt

¾ cup butter

1 egg

1 tsp vanilla extract

1 cup dried apple

Directions

Brown the Butter

  • Cut the butter into even pieces and place in a small light-coloured saucepan over medium-low heat. Stir frequently as the butter melts, foams, and eventually turns a golden amber colour with a nutty, fragrant aroma,  about 10 - 15 minutes.

  • Watch closely; it can go from browned to burned quickly. Remove from heat and transfer to a heatproof bowl.

  • Cool to room temperature.

Preheat & Prep

  • Preheat your oven to 350°F. Line two baking sheets with parchment paper.

Mix Dry Ingredients

  • In a medium bowl, whisk together the flour, oats, brown sugar, cinnamon, nutmeg, allspice, baking soda, and salt until evenly combined.

Combine Wet & Dry

  • Once the browned butter has cooled, whisk in the egg and vanilla extract until smooth. Pour the wet mixture into the dry ingredients and stir gently just until combined, do not over-mix.

Fold in Apple

  • Gently fold in the finely chopped apple until evenly distributed throughout the dough.

Scoop & Shape

  • Scoop approximately 15 portions (about 1½ tbsp each) onto the prepared baking sheets, spacing about 2 inches apart. Flatten each portion lightly with the back of a spoon or your palm,  these cookies don't spread much.

Bake

  • Bake for 10–15 minutes, rotating the pans halfway through, until the edges are golden and the centers are just set.

Cool

  • Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely before serving.
