Chamomile Thyme Hot Toddy
You know that feeling when you wrap both hands around a warm mug and the world outside suddenly feels a little less pressing? That's exactly what this drink is designed to do. Chamomile and thyme are an unlikely but brilliant pair, one soft and floral, the other grounded and herbaceous, and together they create a tea that feels like a deep breath in a cup. Add a little honey for sweetness, lemon for brightness, and bourbon for courage, and you've got a toddy that's equal parts comfort and quiet celebration.

Preparation Time: 5 Minutes
Cooking Time: 5 - 7 Minutes
Serves: 1
Ingredients
1 ½ tsp chamomile, dried
1 ½ tsp thyme, dried
1 cup hot water
1 tbsp honey
1 splash lemon juice
1 ounce bourbon
Directions
Steep the Herbs
Place the chamomile and thyme in a heatproof mug or teapot.
Pour the hot water over the herbs and let steep for 5–7 minutes.
Longer steeping will intensify the herbal flavours.
Remove Herbs
Strain out the herbs using a fine-mesh sieve or tea infuser. Discard the spent herbs.
Add Flavour & Spirit
While the tea is still warm, stir in the honey and lemon juice until the honey is fully dissolved.
Finish with Bourbon
Pour in the bourbon and stir gently to combine.
Serve
Enjoy immediately while warm.
Garnish with a fresh thyme sprig or lemon wheel if desired.
Notes
Temperature Matters: Don't use boiling water (212°F), it can make the chamomile bitter. Let the water sit for 1 - 2 minutes after boiling before pouring.
Strength Control: For a stronger herbal flavour, increase steeping time to 8–10 minutes. For a lighter taste, reduce to 4 - 5 minutes.
Non-Alcoholic Version: Simply omit the bourbon for a soothing herbal tea.
