Preparation Time: 15 Minutes

Cooking Time: 35 Minutes

Serves: 26

Ingredients

1 small beet (~130 g), cooked

3/4 cup dates

1/4 cup peanut butter

1/2 cup sprouted oats, or old fashioned

1/4 cup dark chocolate chips

1/2 tsp cinnamon

1 Tbsp cocoa powder

1 Tbsp cordyceps powder

Additional cocoa powder for dusting (optional)

Directions

Process the Dough

  • Add all ingredients except the chocolate chips to a food processor. Process until a thick, sticky dough forms, scraping down the sides as needed. Continue processing until the cocoa powder and cordyceps are fully incorporated with no dry pockets remaining.

Fold in Chocolate

  • Transfer the mixture to a bowl and gently fold in the chocolate chips by hand until evenly distributed.

Form the Balls

  • Using a small cookie scoop (size #60, about 2 teaspoons per ball), portion the mixture into approximately 26 balls. Roll each portion between your palms to form smooth, uniform spheres.

Coat (Optional)

  • For a finished look, roll each ball in extra cocoa powder until lightly dusted.

Keep Refrigerated
