Crêpes
Blend All Ingredients
Add all the ingredients to a blender and blend for about 30 seconds, or until the batter is completely smooth.
Grease the Pan & Spread the Batter
Lightly grease a pan with butter or avocado oil. Pour ¼ – ½ cup of batter into the pan, then use the back of a spoon (or tilt the pan) to spread it into a thin, even circle.
Cook the Crepes
Cook each crepe until the edges start to lift and the bottom turns lightly golden, flip, and briefly cook the other side. Continue until all batter is used.
Serve Warm with Toppings
Plate the crepes hot, top with sliced peaches, and add a generous dollop of thyme‑maple whipped cream.
