Ginger Carrot Soup
Warm, velvety, and deeply aromatic, this Instant Pot carrot ginger soup turns humble root vegetables into a restaurant-quality meal with minimal effort. By sautéing fresh ginger and garlic before pressure cooking, we unlock layers of flavor that simmer into a perfectly smooth, golden broth. While the process takes about 45 minutes from start to finish, including the time for the pot to come to pressure and release, the result is a comforting, nutrient-packed bowl that feels far more time-intensive than it truly is. Perfect for a cozy weeknight dinner or a healthy lunch, it finishes with a bright splash of lemon and a creamy swirl of coconut milk.
