Pumpkin Pie (Refined sugar free, gluten free, dairy free option)
There is something magical about the flavours of fall, the crisp air, the falling leaves, and the earthy scents of the forest. This recipe brings that outdoor magic right into your kitchen. We've taken the beloved pumpkin pie and infused it with a secret ingredient: mushroom powder. It adds a subtle, savoury undertone that balances the maple syrup and spices, creating a filling that is rich, velvety, and incredibly satisfying. Whether you're hosting a holiday dinner or just craving something special, this pie offers a new dimension of flavour.

Preparation Time: 15 Minutes
Cooking Time: 45 Minutes
Serves: 8
Ingredients
1 398 mL can pumpkin puree
3 large eggs
½ cup maple syrup
1 cup evaporated milk or plant based milk of choice
1 tsp cinnamon
½ tsp nutmeg
¼ tsp ginger
1 tbsp 5 mushroom powder (optional)
Directions
Preheat & Prep
Preheat your oven to 425°F.
Place a rack in the center position.
If using a homemade crust, ensure it is fitted into a 9-inch pie dish and chilled.
Mix the Spice Blend
In a small bowl, whisk together the cinnamon, nutmeg, ginger, mushroom powder, and a pinch of salt until the spices are uniformly mixed and no clumps remain.
Combine Wet Ingredients
In a large mixing bowl, add the pumpkin puree. Sprinkle the spice-mushroom blend over the top.
Mix thoroughly with a spatula or whisk until the spices are evenly distributed and the colour is uniform.
Emulsify
Add the eggs, maple syrup, and milk to the pumpkin mixture.
Whisk vigorously until the batter is smooth, silky, and fully combined.
Scrape down the sides of the bowl to ensure no dry pockets of spice remain.
Fill the Crust
Pour the pumpkin mixture into the prepared pie crust. Use a spatula to smooth the top, ensuring it is level.
The Two-Stage Bake
Stage 1: Place the pie on the middle rack and bake at 425°F for 15 minutes. This initial high heat helps set the crust and start the filling's rise.
Stage 2: Without opening the oven door, carefully lower the temperature to 350°F . Continue baking for 30–35 minutes, or until the edges are puffed and the center is just set (it should still have a slight wobble in the very middle, like Jell-O, but not liquid).
Cool Completely
Remove the pie from the oven and transfer it to a wire rack.
Serve
Slice and serve with a dollop of whipped cream, a drizzle of maple syrup, or a light dusting of cinnamon.
