Sweet Potato Brownies (Gluten free, Dairy free, Refined sugar free)

Who says healthy desserts can't be decadent? These Fudgy Sweet Potato Brownies prove that nutritious ingredients can deliver serious indulgence. By swapping refined flour for almond flour and using mashed sweet potato as the base, we create a naturally sweet, fiber-rich treat that satisfies your chocolate cravings without the guilt. The secret weapon? A touch of instant coffee that deepens the chocolate flavour without adding a coffee taste. The result is a dense, moist brownie that's packed with vitamins, gluten-free, and perfect for anyone looking to sneak more veggies into their diet, without sacrificing flavour.

Rich, dense, and deeply chocolatey, these brownies use creamy mashed sweet potato as their base for a naturally sweet, nutrient-packed treat. A hint of instant coffee amplifies the chocolate flavor, while almond flour keeps them gluten-free. They're fudgy in the best way possible: gooey, indulgent, and surprisingly wholesome.

Preparation Time: 20 min

Cooking Time: 20 min

Serves: 9 - 16

Ingredients

1 cup sweet potato, mashed

¾ cup almond flour

½ cup cocoa

½ cup almond butter (or nut butter of your choice)

1 tbsp instant coffee

1 tbsp hot water

¼ cup maple syrup

¼ tsp salt

½ cup walnuts (optional)

¼ cup chocolate chips (optional)

Directions

Preheat & Prep

  • Preheat your oven to 350°F.

  • Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides for easy removal. Lightly grease the exposed sides.

Dissolve the Coffee

  • In a small bowl or cup, dissolve the instant coffee in 1 tbsp hot water. Stir until fully dissolved and set aside.

Mix the Batter

  • In a clean mixing bowl, combine the mashed sweet potato, almond flour, cocoa powder, almond butter, maple syrup, salt, and the dissolved coffee mixture. Stir well until fully incorporated and no dry pockets remain.

Fold in Optional Mix-ins

  • If using, gently fold in the walnuts and/or chocolate chips until evenly distributed.

Spread Evenly

  • Transfer the batter to the prepared pan. Using a spatula (slightly dampened to prevent sticking), spread it out into an even, flat layer.

Bake

  • Place on the center rack and bake for 20–25 minutes. The edges should be set and slightly pulling away from the sides, while the center will still look soft.

Cool Completely

  • Remove from the oven and place the pan on a wire rack. Allow to cool completely (at least 1 hour) before cutting.

  • The brownies continue to set as they cool, patience pays off here.

Slice & Serve

  • Use the parchment overhang to lift the slab out of the pan.

  • Cut into squares with a sharp knife.

  • For the cleanest cuts, wipe the blade between each slice.
