Preparation Time: 5 - 35 Minutes

Cooking Time: 20 Minutes

Serves: 2

Ingredients

1 cup oatmeal

2 ½ cups water

½ cup sweet potato, mashed

2 tbsp maple syrup or brown sugar

½ tsp cinnamon

¼ tsp ginger

¼ cup pecans, divided, optional

¼ cup raisins, divided, optional

Directions

Prep the sweet potato

  • Pierce the potato with a fork bake at 350 °F for 35‑40 min until tender.

  • Let it cool slightly, peel, and mash with a fork. Set aside.

Combine the base

  • In a medium saucepan, whisk together the rolled oats, water, cinnamon, ginger, and a pinch of salt.

Bring to a boil

  • Place the saucepan over medium‑high heat. Once the mixture starts bubbling gently, reduce the flame to low.

Simmer

  • Cook uncovered on low heat, stirring every 2‑3 minutes, for about 15‑20 minutes or until the oats are soft and most of the liquid is absorbed.

  • If the oatmeal thickens too quickly, splash in a little extra water to reach your desired consistency.

Fold in the sweet potato

  • While the oats are still hot, stir in the mashed sweet potato until the mixture is uniform and creamy.

Sweeten

  • Add the maple syrup (or brown sugar) and stir until fully dissolved. Taste and adjust sweetness if needed.

Portion & garnish

  • Divide the oatmeal into four equal bowls.

  • Sprinkle each bowl with pecans and raisins (if using).

Serve & Enjoy!

Notes:

To save time, use leftover sweet potatoes.

To increase protein you could also add hempseeds, greek yogurt, or swap half the oats for quinoa flakes
