Ingredients

1 cup greek yogurt

1 cucumber

2 cloves garlic

1 tsp lemon zest

2 tbsp lemon juice1 tbsp dill, fresh

1 tbsp mint, fresh

1/4 tsp salt

black pepper to taste

Directions

Prepare the cucumber

  • Grate the cucumber.

  • Wrap the grated cucumber in a clean tea towel or cheesecloth and squeeze firmly to remove as much moisture as possible.

Prep the aromatics

  • Grate the garlic.

  • Finely chop the fresh mint and dill.

  • Zest the lemon (avoid the white pith).

Combine the ingredients

  • In a mixing bowl, add all the ingredients

  • Stir everything together until the mixture is smooth and evenly combined.

Chill

  • Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes (longer if you have time). This allows the flavours to meld and the dip to thicken slightly.

Serve

  • Transfer to a serving bowl, drizzle a tiny bit of olive oil if desired, and garnish with a sprig of mint or a pinch of extra dill. Enjoy with pita, fresh veggies, or as a sauce for grilled proteins.
