Preparation Time: 15 Minutes
Cooking Time: 8 Hours
Serves: 2
Ingredients
1 cup almond milk, unsweetened
1/4 cup chia seeds
1-2 tbsp maple syrup
1 tsp vanilla extract
1 cup cherries, frozen
1 tbsp water
1/2 tsp cinnamon
1 tsp vanilla extract
Directions
Chia Pudding
Combine Ingredients: In a medium bowl, whisk together the almond milk, chia seeds, maple syrup, and 1 tsp vanilla extract until well combined.
Initial Rest: Let the mixture sit for 10 minutes, then stir again to prevent clumping. This second stir is crucial for achieving a smooth, even texture.
Refrigerate: Cover the bowl (or divide into individual jars) and refrigerate overnight (or at least 4 hours) until the chia seeds have fully expanded and the pudding has thickened.
Cherry Compote
Simmer Cherries: In a small saucepan, combine the cherries, water, and cinnamon. Bring to a gentle simmer over medium heat.
Reduce: Cook for about 10 minutes, stirring occasionally, until the liquid reduces to a thick, syrupy consistency and the cherries have broken down.
Cool & Finish: Remove from heat and let cool slightly. Stir in the remaining 1 tsp vanilla extract to preserve its flavour.
Assembly
Serve: Spoon the cherry compote over the chilled chia pudding. Serve warm or at room temperature.
